Recipe:
Cheddar Cheese Soup -6 servings
- 1/4 lb. bacon fine chopped
- 1 med red union med chop (we chop fine)
- 1/2 c celery fine chop
- 1/2 c carrots shredded
- 3 Tbsp AP flour
- 3 c whole milk
- 2 c chicken stock
- 12 oz. grated white cheddar
- 3 dashes Tabasco
- 1/2 tsp Worcestershire
- 1/2 c Moosehead Canadian Ale, room temp
- salt & pepper to taste
- 1 Tbsp sliced chives to garnish
- In a large heavy bottomed pot, cook bacon over medium heat until wilted
- Add onions, carrots to pot & cook until onions are translucent & bacon crisp.
- Sprinkle in flour, stir constantly for 2 min. Stir in milk & stock a little at a time, blending well. Bring to boil, then cover & simmer 15 min.
- Remove from heat & whisk in cheese, Tabasco, Worcestershire & ale. Salt & pepper to taste. Garnish w/ chives if desired.
